3 sweetbreads (about 4 pounds), membrane removed

1 tablespoon olive oil

Coarse salt and freshly ground black pepper

Directions

  1. Place sweetbreads on the heated grill. Brush with olive oil. Season with salt and pepper. Cook until done, about 1 hour.;
