Tomato and Basil Sandwiches with Olive Mayonnaise

1/4 cup mayonnaise

8 Kalamata or other brine-cured black olives, pitted and minced

12 (1/2-inch-thick) oval slices country-style bread

1 cup loosely packed fresh basil leaves, chopped coarse

3 large tomatoes, each cut into 4 (1/2-inch-thick) slices


  1. In a small bowl, combine well the mayonnaise and the olives, spread the mixture on one side of the bread slices, and sprinkle it with the basil. Divide the tomato slices among half the bread slices, season them with pepper, and top them with the remaining bread.
