In a blender or food processor blend tuna, mayonaise, deglazing liquid, lemon juice, garlic paste, zest, and hot pepper sauce and stir in capers and salt to taste. Sauce may be made 2 days ahead and chilled, covered. Thin sauce to desired consistency with water.;
