At Westbank Grill at Four Seasons Resort Jackson Hole, Executive Chef Michael Goralski earns praise for his housemade jerky. The charcuterie spread is a fine sampling, including smoked wild boar salami, buffalo jerky and elk salami. When paired with farmstead cheese, the proper accoutrements and a glass of wine, it’s a stellar way to start a meal.
