Also called mi krob, the name of this Thai dish literally translates to "crispy noodles," and mee krob is based on deep-fried rice noodles that crisp and puff up when fried. In Thai these noodles are called sen mee (see rice noodles). The noodles are tossed with a sweet-and-sour-flavored stir-fry, which has many variations but typically contains ingredients such as fish, shrimp and/or pork, vegetables and/or fresh bean sprouts, lemon or lime juice, green onions, chiles, shredded kaffir lime leaves or peel and garlic.
