A culinary term referring to dishes garnished or made with potatoes. This designator honors Frenchman Antoine-Augustin Parmentier, an 18th-century French botanist who devoted his lifetime to promoting the potato's attributes and who persuaded Louis XVI to encourage the cultivation of potatoes.
