Grünerkäse ("green cheese"), Glarnerkäse, Krauterkäse and Schbzieger, Sapsago is a hard, truncated-cone-shaped cheese from Switzerland. It's made from non-fat milk, whey or buttermilk (or sometimes a combination of the three) and contains less than 10 percent fat. Its light grayish-green color and pungent herbal flavor come from the addition of blue melilot, a special variety of clover and/or fenugreek, a plant known for its pleasantly bitter, slightly sweet seeds. Sapsago is used primarily for grating and adds interest to everything from salads to pasta. See also cheese.
