An East Indian snack of crispy, deep-fried chickpea noodles that are about the thickness of spaghetti, some slightly thicker than others. Sev comes plain or flavored with various seasonings such as ajowan, chili powder, cumin, garlic, spinach and turmeric. This spicy mix can range from slightly hot to scorching. Some versions include other items like nuts and fried or roasted lentils. Sev, which can be found in specialty Indian markets, is also sometimes sprinkled on top of Indian dishes.
