An Italian-style croquette made with risotto (or other cooked rice) that has been bound with beaten egg, then shaped around a filling of cheese (though meat or various vegetables may be used). The croquette is then dipped in beaten egg, rolled in bread crumbs and fried until crisp and heated through.
