Traditional Supper Stuffing with Cider Gravy

Ingredients

  • 4-5 cups farmhouse-style crusty bread, cut into 1-inch cubes
  • 1 teaspoon poultry seasoning, 1/3 palmful
  • 6 tablespoons butter, divided
  • 4 McIntosh, Golden Delicious, Gala or Honey Crisp apples
  • 2 onions, chopped into bite size pieces
  • 6 ribs celery from the heart, chopped into bite sized pieces
  • 1 fresh bay leaf
  • Salt and pepper
  • A handful flat-leaf parsley, chopped
  • 2 pounds roast turkey breast, 3 slices - inch thick from the deli counter, cut into bite sized cubes
  • 4 cups chicken stock, divided
  • 3 tablespoons all-purpose flour
  • 1 cup apple cider

Directions

Heat the oven to 325 degrees F and scatter bread on baking sheet, season with poultry seasoning and bake to toast bread, 10-12 minutes.

Quarter the apples and slice into each quarter on an angle to cut away the core. Chop apples into bite size pieces.

Heat a large skillet over medium heat with 3 tablespoons butter, when the butter melts, add the apples, onions, celery, bay leaf and parsley. Season with salt and pepper and cook until tender, 7 to 8 minutes. Add turkey to the skillet and combine with vegetables, heat through 2 to 3 minutes then fold in bread and moisten with about 2 cups chicken stock.

While stuffing cooks, melt 3 tablespoons butter in a sauce pan over medium heat and whisk in flour, 1 minute, whisk in cider and chicken stock and season with salt and pepper to taste, reduce 4 to 5 minutes.

Serve stuffing doused with 1/2 cup gravy.

    I just made this dish. When i saw it RR make it, it looked really yummy, but it actually didn't taste as good as it looked.... It was barely eatable for me, but my girls picked out the turkey, and all the veggies ended up in the garbage unfortunately. It's definitely not a dish i would recommend to anyone with kids. I even made it with mashed potatoes on the side to make it more interesting for them to eat, but that didn't work. I guess the flavors with the celery and apples and onions were too much for them. Plus if anyone is gonna try this, cut the recipe in half, bc if u end up not liking it, its really a waste of food. I hope this review helps someone. Sorry Rachael! ; )Read more

    Original, But May Not Please Everyone

    I made all three dishes from this show and thought this one was fantastic. I just wish my family liked it as much as I did.... I figured being apple lovers that they would enjoy it, but they thought it was just OK and picked out what they liked (mostly the turkey). They don't want me to make it again for them, but I will scale it down to make it in the future as a single portion for me. The recipe does make a huge amount and I did cut the recipe in half. Served with the other side dishes, it was more than enough to feed my family of 4. This dish is original, but may not be for everyone's palate.Read more

    I didn't have apple cider on hand so I substituted by pureeing baked apples and a little bit of water...it still came out... pretty tasty. But I had to cook the vegetables longer than ten minutes for them to get tender.Read more
