Ingredients

  • 2 tablespoons butter, plus 2 tablespoons butter
  • 1/2 cup finely chopped onion
  • 3 tablespoons flour
  • 1 1/2 cup hot milk
  • 1 1/2 cups grated sharp cheddar
  • 2 heads broccoli, cut into 2-inch pieces, quickly steamed
  • 1 1/2 cups crushed butter crackers

Directions

Preheat oven to 350 degrees F.

Melt 2 tablespoons of butter in medium saucepan over medium high heat. Add in onions and cook until translucent, about 4 minutes. Stir in flour and stir to coat onions. Cook for 2 minutes. Remove from heat and whisk in hot milk. Return to heat and bring to a simmer. Stir in cheese by the handful. Add broccoli to the cheese sauce and pour into buttered casserole dish.

Melt remaining butter in a small skillet and stir in cracker crumbs. Cover the broccoli casserole with the buttered cracker crumbs. Bake until bubbly and lightly browned, about 20 minutes.

    I picked this recipe because I had most of the ingredients on hand. After adding the flour it did seem a bit like mashed potatoes, but I added a little more milk, a couple pinches of nutmeg, some onion powder and more cheese. Didn't have crackers, so used bread crumbs and it was delicious! Will definitely be making it again!

    Not bad, but not great. Took more time than just steaming some broccoli and making a cheese sauce and wasn't as tasty. The crackers came out kind of soggy, maybe it needed more cooking time but I would probably just leave them off or use less if I made it again.

    Very tasty and easy to make! Will def be making this again! Great way to get the kids to eat broccoli! I only used about 1 tbs. of flour and a lot more cheese! I used a combo of sharp and reg cheddar and monterey jack. I also used a little velveeta and added a bit of black pepper to the mix as well. Also, my kids enjoy it when i add some frozen corn to the mix...they seem to eat the broccoli more! I will do anything to get them to eat the greens!!!
