Directions

Peel yams and cut in one-inch pieces. Place yams in cold water until all yams are peeled and cut. Drain yams. Place cut yams in deep baking dish. Add sugar, pineapple juice, orange juice, and water. Sprinkle ground cinnamon over top of yams. Cover yams and bake in 400 degree preheated oven for approximately 40-50 minutes or until yams are fork-tender.

    I kept the ingredients as is but I didnt use any orange juice and reduced the amount of water to 3/4 cup. I baked uncovered at 400 degrees for 2 hrs basting every half hour. Big hit with the family.

    It was my first time making yams from scratch and they were a hit!! I just added the marshmallows for old time sake.. Loved the pineapple in it..

    ONCE THE YAMS SOFTENED AND I WAS LEFT WITH LOTS OF LIQUID I POURED THE LIQUID IN A SAUCE PAN AND REDUCED IT A BIT.. THEN I POURED IT BACK ON THE YAM.. CARAMELIZED VERY WELL AND HAD A TANGY SWEETNESS MY GUESTS ABSOLUTELY LOVED! TOTALLY MAKING THIS AGAIN!

    these were the worst. i have to agree with the sentiment that this recipe deserves a negative star rating. there is WAY too much liquid, the flavor is..."off" im not sure what it is but its not quite right. i added some nutmeg and that made it a litte better. i ended up having to drain the liquid off and put it in a pan to reduce it with some butter, honey, and brown sugar. after it thickened up i put it back over the yams n baked another 30 mins or so. better but still not what it should have been. they never candied at all and werent nearly sweet enough. im a good cook and this was just a total failure. get another recipe, or seriously, make something up cause this one is just NOT worth the time or groceries.
