Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced (1 cup)
  • 1 red bell pepper, diced (1 cup)
  • 2 carrots, diced (1/2 cup)
  • 2 teaspoons ground cumin
  • 1 pound extra-lean ground beef (90 percent lean)
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups water
  • 1 chipotle chile in adobo sauce, seeded and minced
  • 2 teaspoons adobo sauce from the can of chipotles
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper
  • 1 (15.5-ounce) can black beans, drained and rinsed
  • 1 (15.5-ounce) can kidney beans, drained and rinsed
  • 1 (15.5-ounce) can pinto beans, drained and rinsed

Directions

Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Cook, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and continue cooking, partially covered, 20 minutes longer. Season, to taste, with salt and pepper.

    Although this didn't win the Chili cookoff contest last night, our house thought it was a real winner. I did have to play... around with water and tomato sauce to get it the right consistency. Excellent dish overall and was really good with Jalapeno Corn bread. Read more

    This chili is delicious and easy to make! I read several of the previous reviews and how they raved about the chipotle and... adobo sauce. Unfortunately, I was unable to find that item so I used a 4 ounce can of diced green chiles instead... This turned out great! Also, I eliminated the red bell pepper (I'm not a fan) and added 2 cloves of garlic. It came out wonderful. I will definately be making this again, especially since it is a healthier version of this classic dish.Read more

    This chili was so easy and inexpensive to make, and boy was it delicious. I added extra heat to it by doubling the chipotle... and adobo sauce that was called for in the recipe; that stuff trully makes this chili delicious. This will now be a regular recipe in my arsenal.     I am just starting out in my quest to become the main cook in the family and am especially interested in healthy stuff. This... recipe was so easy to make and I love how there were so many types of beans included. I agree with other reviewers that the chipotle chilis were definitely what gave it a little bit of kick. It was a really satisfying, filling meal. It does make quite a bit (there are just 2 of us), we had it for 2 meals and then I froze the rest and it REHEATED BEAUTIFULLY. Will definitely be making this again!Read more
