Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon fine salt
  • 2 large eggs, room temperature
  • 2/3 cup sugar
  • 3/4 cup unsalted butter, melted
  • 2 teaspoons pure vanilla extract
  • 1/2 cup milk

Icing:

  • 1 1/3 cups confectioners' sugar, sifted
  • 1 1/2 tablespoons finely grated lime zest
  • 2 tablespoons freshly squeezed lime juice

Directions

1 drop green food coloring

  • 6 large ripe strawberries, hulled
  • Green sanding sugar
  • Fresh mint leaves or candied leaves

Equipment: 6-cup jumbo muffin tin

Preheat the oven to 350 degrees F. Line the muffin tin with cupcake liners.

Whisk the flour, baking powder, and salt together in a medium bowl.

In another medium bowl, beat the eggs and sugar with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the butter and then the vanilla.

While mixing slowly, add half the dry ingredients, then add all the milk, and follow with the rest of the dry ingredients. Take care not to over mix the batter. Divide the batter evenly in the prepared tin.

Bake until a tester inserted in the center of the cakes comes out clean, about 30 minutes. Cool cupcakes on a rack in the tin for 10 minutes, then remove. Cool on the rack completely.

For icing: Mix the confectioners' sugar and lime zest in a medium bowl. Add the lime juice and mix with an electric mixer to make a firm but pourable icing. (If needed, add up to 1 teaspoon more juice, but take care if the icing is too loose it doesn't set properly.) Add food color to make a pale pastel green icing.

To assemble: Remove cupcake from its liner. Cut and remove a strawberry (coned) shaped portion of cupcake from the top of each cupcake, leaving about 1/2 to 1-inch of cake in the bottom. Stuff each cake with a strawberry and cover with a little bit of cake. Spoon and spread icing over the top of the cupcakes. Sprinkle with green sanding sugar. Top with small mint leaves or candied leaves.

    I was a little worried about how much butter was going into the batter but it came out great! The icing tastes good but the... texture is kind of like cement.     Great but help me with the icing texture.

    I haven't tasted these cupcakes yet because they are still cooling a bit more but I have tried all of the parts separately... and they are delicious. My only problem is that the icy consistency and texture is a bit more like what would be on top of a cinnamon bun. I followed the ingredients exactly. It does not look like what is on top of the cupcake in the picture which is what I would prefer. Any suggestion? Please help soon. Tonight was a trial run for the possibility of bringing these to a Greek Easter party this weekend. Also, the recipe doesn't seem to make enough frosting for the amount of cupcakes. Overall though, these cupcakes seem really really tasty.Read more

    Delicious frosting, cake could be better

    I just made this recipe and it was delicious. It's a big hit, especially the lime icing (I'll be using that on a lot of... future baked goods). Everyone loves the combo of the strawberry and lime. My only critique would be the cake part. It's texture and taste was more like a muffin. I definitely plan to make these again, but will instead use a yellow or white cake base, rather than this given recipe's base cake.Read more

    I tried this recipe with the strawberry baked in due to reviews posted. The cupcakes were delicious but be prepared to find... a disenegrated strawberry in your cupcake as opposed to the pictured one with the strawberry placed after the baking was complete. It had poor presentation as a result. The icing was very good and next time I will try not to cut corners.Read more

    I love this cupcake! I made 1/2 with the strawberry in the batter and the other 1/2 after the cupcake cooked and I just loved... the one with the cooked strawberry in it! The juice from the strawberry made it more moist! Read more
