Ingredients

  • 1 large russet potato, peeled and cut into 1-inch chunks
  • 1 pound broccoli florets
  • 1/2 cup chicken broth
  • 4 ounces cream cheese
  • 1/4 cup freshly grated Parmesan
  • Salt and freshly ground black pepper

Directions

Fill a large pot with enough water to come 2 inches up the sides of the pot. Set a steamer rack in the pot, cover, and bring the water to a boil over high heat. Add the potato chunks and cook until they are very tender, about 18 minutes. Transfer the potatoes to a medium bowl and mash until smooth.

Place broccoli into steamer rack and steam over medium heat until the broccoli is very tender, about 12 minutes. Transfer the broccoli to the bowl of a food processor. Add the broth, cream cheese, and Parmesan. Process until the broccoli is pureed and almost smooth.

Stir the broccoli puree into the mashed potato and blend well. Season the puree to taste with salt and pepper, and serve.

    Eat your broccoli...

this one is good! Substitute mascarpone cheese for cream cheese for a lighter but just as flavorful dish. Leave out the... potato if you're carb-conscious. Add a few minced garlic cloves. This is a terrific dish. Highly recommended.Read more

    Tasty and creamy

Rated: 5 stars out of 5
Made it ahead and it was very yummy, it was creamy and I could really taste the parmesan. After reheating, the flavors were a... little bit dulled and I would suggest avoid reheating, though it was very tasty regardless.Read more

    Pleasantly surprised!

Rated: 5 stars out of 5
I was skeptical, but I thought it would be a way to get broccoli into my partner's diet. I loved it, but, as usual, he turned... his nose up to broccoli. The only thing I would change is to try and steam both at the same time, as the potato got cold while the broccoli was steaming. Definitely mash the potato separate, as it gives the puree a wonderful texture. Will make again!Read more

    Versatile, Colorful, Creamy!

Thought I'd post a time-saving tip: if you have a bamboo steamer, this dish takes half as long. Put the potatoes in the... bottom part of the steamer and the broccoli in the top, lifting the broccoli when it's done (since it will be before the potatoes) and leaving the potatoes until they're tender. Made this whole process very fast. I also steamed with chicken broth, which added more flavor to the dish. I wonder if it'd also be good with garden vegetable cream cheese for variety's sake? I was very pleased with the results of this recipe. You can taste both the potato and the broccoli well. A great side dish!

    Peas work too!

Rated: 5 stars out of 5
I substituted frozen peas for the broccoli, steaming them for about 5 minutes. Loved it! I just threw everything in the... food processor instead of the separate mashing, pureeing, etc. It does look a bit like baby food, but it tastes amazing.Read more
