Ingredients

  • 6 ounces thinly sliced pancetta, chopped
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 1 cup dark beer
  • 1 cup tomato sauce
  • 1/3 cup dark brown sugar
  • 1/4 cup balsamic vinegar
  • 3 tablespoons mild-flavored molasses
  • 6 teaspoons Dijon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 (15-ounce) cans cannellini beans, drained

Directions

Preheat the oven to 400 degrees F.

Cook the pancetta in a heavy large oven-safe pot over medium heat until crisp, about 8 minutes. Add the onions and garlic, and saute until the onions are translucent, about 5 minutes. Mix in the beer, tomato sauce, brown sugar, vinegar, molasses, mustard, salt, and pepper. Stir in the beans. Bring to a simmer. Transfer to the oven and bake, uncovered, until the bean mixture bubbles and thickens slightly, stirring occasionally, about 45 minutes.

    Loved these!!!....I used what I had in my pantry/fridge instead of following the recipe exactly. I used a mix of lima and butter beans, 8 slices of thin bacon (my dog and husband ended up getting to the bacon, so only the grease was used to sautee instead of pancetta. I also used half of what the balsamic called for due to other reviews. I think for the user who said they were bland, maybe let them sit a little longer before baking so the beans can absorb the flavors. They were a huge success!!!

    I really liked the ease of these beans and overall taste. I think I would use a little less balsamic the next time I make them as I found it to be a little overpowering. I will deffinately make them again

    I made this exactly as instructed - when I took it out of the oven after the 45 minutes at 400, it was so dry, it no longer resembled baked beans. Though it was very good, I HIGHLY recommend checking on it and most likely bake it for only half the time.
