Ingredients

  • 1 acorn squash, about 1 1/2 pounds

Directions

To cook squash in the microwave, cut squash in 1/2, scoop out the seeds as if you were cleaning cantaloupe only it will be a little harder. Lay cut side down on a piece of microwave safe plastic wrap placed directly on microwave bottom or plate. Cook on high in 5 minute intervals until completely softened and cooked through, about 5 to 7 minutes for 1/2 an acorn squash. Cook times will vary depending upon the size and variety of your squash.

    I was not sure about using the microwave because I grew up on baked squash. It turned out great! It is so much more energy efficient than firing up the oven. I will be eating more squash from here on!

    Worked like a charm! Each half only took 5 minutes and was cooked to perfection! Thanks for this easy recipe. I filled each half with diced fresh pears, honey, pecans, dried cranberries, and a touch of light margarine.

    This method cuts the time it takes to cook acorn squash down by 75%, and it tastes great! All I add is a drizzle of honey.
