Ingredients
- 16 amaretti cookies, crumbled
- 4 shots amaretto or other almond liqueur
- 8 scoops French vanilla ice cream
- Whipped cream, in canister
- 1/4 cup or 1 (2-ounce) package slivered almonds
Directions
Crumble 4 amaretti cookies into each of 4 dessert cups and douse them with almond liqueur. Top with ice cream, whipped cream and almonds.

This was so quick. I made this for Father's Day. It was great as it was nice and light. I was not able to find the cookie called for in the recipe so I crushed Biscotti,( it had almonds in it and was also coated with a bit of chocolate,it worked out great. Instead of making individual dishes,I placed the crushed biscotti in a pretty pie plate,drizzled the amaretto over the biscotti, added scoops of frozen vanilla yogurt, topped it a bit with light whipped cream then sprinkled slivered almonds over the top.It looked so pretty and was devoured quickly. Rachel, thanks so much for such a quick and tasty dessert.

My relatives in Italy once served us a similar dessert but put the whole cookie in the middle of the ice cream ball then drizzled the liquor over followed by the whipped cream and almonds. This was just as delicious !! I serve it often as a simple, elegant dessert.
