Ingredients

  • 1/2 cup white vinegar, eyeball it
  • 2 rounded teaspoons sugar
  • 1 teaspoon mustard seed
  • 1 teaspoon salt
  • 1 clove cracked garlic
  • 1 teaspoon dried dill or 2 tablespoons fresh dill leaves, chopped or snipped
  • 1 bay leaf
  • 4 kirby cucumbers, cut into 1-inch slices on an angle

Directions

Heat small saucepan over medium high heat. Add vinegar, sugar, mustard seed, salt, and garlic to the pan and cook until it begins to simmer and sugar dissolves. Toss the dill, bay leaf, and sliced cucumbers together in a heat-proof bowl. Pour the simmering liquid over the cucumbers and stir to evenly coat. Allow to cool to room temperature or chill before serving.

    This is really an excellent recipe. I followed most of the other reviewers' suggestions, and added some pieces of green... pepper and Vidalia onions. I might make this again using only the peppers and/or onions. One thing I didn't like about the recipe itself was the instruction to add "rounded" teaspoons of sugar. That's a bit too inexact for pickles. I also agree that the garlic should be chopped or crushed. A whole, cracked garlic clove can't really impart much flavor to quick pickles; it doesn't have time to infuse the brine. Other than that, excellent.Read more

    I think Rachel Ray has great recipes and they are very easy to make. My family loves these quick pickles and so do I.

    I was surprised by how good these were. They were absolutely delicious. Normally I don't like pickles that are at all sweet,... but the sugar was a nice balance. They were so good we ate them all before they were completely chilled. Next time I'll make a bigger batch so there are some to save! For as simple as the recipe was, the instant delicious results were a shock. I agree that it would work better with more liquid. Also, I think the brine would be delicious for blanched cauliflower or green beans, as I believe Racheal suggested in the show.Read more
