You can create up to five timers

Ingredients

  • 1 large package frozen waffle cut fries
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 2 cups milk
  • 2 cups grated Cheddar
  • 2 chipotles in adobo, chopped, plus 2 spoonfuls sauce
  • Salt

Directions

Bake waffle fries to package directions. Heat butter in a small pot over medium heat and whisk in flour. Cook the flour a minute then add the tomato paste. Cook paste a minute then whisk in milk. When sauce bubbles, stir the cheese and chipotles into it. Season the sauce with salt, to taste.

Remove fries from oven when crisp and golden brown. Spoon the thick cheese sauce over waffle fries and serve.

    This recipe was excellent. Pay attention to the recipe about adding salt at the end. IT DOES MAKE A DIFFERENCE! Only 3 out of 5 of us ate the sauce. I used a 22 oz bag of waffle fries. Therefore, next time I will probably half the sauce. Another tip- buy a tube of tomato paste instead of a can (unless you plan on using the rest of the paste quickly. I served the fries and sauce with sliders. Thanks, Racheal, for a very user-friendly recipe.

    This fantastic recipe brought the family together wonderfully! My children, ages 8, 11 & 12, all were able to help make it. Then, we used one big platter to serve it on and eat off of. It was great bonding time & the sauce is FANTABULOUS!
