Hasselback Roasted Potatoes

Ingredients

  • 2 pounds potatoes, medium sized (your choice of type)
  • Salt
  • 1 1/2 tablespoons all-purpose flour
  • Freshly ground black pepper
  • 1/3 cup canola, vegetable or grapeseed oil
  • 1/4 cup very finely parsley leaves

Directions

Peel the potatoes and rinse to remove any traces of dirt. Cut into the potatoes into uniform pieces. (This will help in cooking time if they are all similar.) Take a sharp knife and beginning on 1 end, cut about 2/3 through the potato. Repeat the same incision from 1 end of the potato to the other, spacing the cuts uniformly. (The idea is to create the look of a fan, which is why you don't cut all the way through the potato.)

Place the potatoes in a large saucepan and cover with water. Add a pinch of salt and cook until just tender. (Do not overcook. The potatoes should remain a little hard, as they will continue to cook during roasting.)

Preheat the oven to 375 degrees F.

Drain the potatoes and place them on absorbent toweling to remove excess water. Mix the flour and salt and pepper, to taste, in a bowl and carefully toss with the already blanched potatoes. Place the floured potatoes onto a baking sheet and drizzle with oil. Bake until golden brown, approximately 30 to 40 minutes.

To finish, scoop the potatoes with a slotted spoon onto absorbent paper toweling and to drain any excess oil. Transfer to a serving dish and garnish with the parsley.

    I made this recipe AFTER reading most of the reviews and mine turned out just fine. The do need a little help in the taste... department but they fanned out perfectly. After peeling, put them in cold water to "open up" just the same was you do with a blooming onion and they will fan out nicely. I will experiment the next time with different spices to put in the flour mixture before coating.Read more

    I followed the recipe as best as I could and like many of the other reviewers it came out nothing like the picture and the... video. Very bland and pale looking. It seems like he used small potatoes and did something more to them to get them to fan out the way they did. My wedges stuck together the whole time even though I tried to seperate them as much as possible. The lack of seperation resulted in no flavor on the inside even though I added some garlic and basil to the flour mixture. Guess it takes a couple tries to get it right.Read more

    I was SSSSSSSSOOOOOOO EXCITED to prepare these potatoes! It started out okay but when it came to baking them they didn't... brown like they should have! I followed the directions as written, but they didn't come out right. I was able to save them by deep frying them. I really was trying to avoid frying them but it seem to be inevitable because they weren't turning out they way they should.     I tried making these. I took Paula's advise and added paprika. It gave them more flavor. The only thing was that they did not... get done like they were supposed to. I ended up cutting them in slices and frying them in the fry pan. they weren't too bad then. Read more
