Directions

Cooking spray

2 large sweet potatoes, peeled and cut into wedges

1/2 teaspoon salt

1/4 teaspoon ground black pepper

Preheat oven to 400 degrees F.

Coat a large baking sheet with cooking spray.

Arrange potato wedges on prepared baking sheet in 1 layer and coat them with cooking spray. Sprinkle potatoes with salt and black pepper. Roast 30 minutes, until tender and golden brown.

If preparing in advance, fill a medium saucepan 3/4 full with water and bring to a boil. Add the potato wedges and boil for 5 to 7 minutes, or until just beginning to get tender. Drain well. When you plan to serve them, bake par-boiled potatoes at 400 degrees F until golden brown, about 10 minutes.

    great recipe..i adjusted it though. I cooked the sweet potatoe fries for 45 minutes and made them thinner using a wavy... potatoe cuter. I also added some honey, and sugar with some cinnamon to help brown them. They came out WONDERFUL AND CRISPY.. i will be making them again sometime soon.Read more

    They just didn't crisp up for me. I added some cinnamon which worked well but they were just kinda soggy. Great concept but... not much different than a baked sweet potato cut into strips. Read more

    These sounded awesome and interesting, but I was a little disappointed. Like the other reviews; mine turned out soggy in the... middle, and burnt on the edges. None of them were crispy, which is the best part. I probably wouldn't make these again.Read more

    skip the fries... just make baked sweet potatoes! I tried this twice... just in case I did something wrong the first... time. Sorry, Robin... love ya, but this dish isn't your best "quick side".Read more

    I love sweet potato fries, and they are so easy to make. I usually coat them with olive oil by shaking in a plastic bag... instead of using cooking spray, but either way works just fine. Also, I've found that a touch of sugar (a little less than the amount of salt you add) and even some ground mustard adds extra flavor to the fries. Definitely a favorite!Read more

    How is this a recipe? All you are doing is throwing potatoes in the oven for few minutes. Anybody could come up with this.
