Directions

Add 1/4 cup olive oil to a large skillet over medium heat. Add the mushrooms and cook them for about 3 minutes. Remove from the heat and stir in the lemon zest and juice, garlic, thyme, and bay leaves. Pour over the remaining olive oil and season the mixture with salt and pepper. Pour into a bowl and allow to cool. Serve at room temperature.

    Made this yesterday. It was easy and totally delish. Cut receipe by
    half....guests loved it. It is a keeper. Served with olives,
    fresh mozzarella and deviled eggs.

    I used half the oil, and it was tasty. Boyfriend and i both enjoyed it. VERY MUCH A LEMON FLAVOR. If you are ok with that, make it and enjoy. leftovers are just as good. i mixed leftovers with tomatoes and it was great. Will make again as side, but will likely make it with tomatoes in a chicken dish versus eating alone. (only b/c it was sooo lemony I could use less lemon, but i think it would not "match" the dish....

    The recipe was delicious! The only problem I had with it was the fact, the prep time didn't take into account the actual cleaning and quartering of 2 lbs. of mushrooms. It's closer to an hour, but I guess 10 mins. sounds alot easier. (Hence the 4 star rating instead of 5. I made the recipe twice for 2 different occasions, it was THAT good! The first time I used the cremini mushrooms & the second w/ the buttons. I prefer the cremini's b/c they seem to hold the flavors better. This recipe is a keeper!
