Ingredients
- 4 ears corn
- 1/2 cup mayonnaise
- 1 1/2 cups sour cream
- 1/4 cup freshly chopped cilantro leaves
- 1 cup freshly grated Parmesan
- 1 lime, juiced
- Red chili powder, to taste
- 2 limes cut into wedges, for garnish
Directions
Remove the husks of the corn but leave the core attached at the end so you have something to hold onto. Grill the corn on a hot grill or cast iron griddle pan until slightly charred. Turn it so it gets cooked evenly all over. Mix the mayonnaise, sour cream and cilantro together. Grate the Parmesan in another bowl. While the corn is still warm slather with mayonnaise mix. Squeeze lime juice over the corn and shower with Parmesan. Season with chili powder and serve with extra lime wedges.

A good idea but a bad execution. I was craving this corn from a local taqueria and decided to make it myself. I should have KNOWN from the recipe it would be dripping in mayo sauce. I would recommend cutting it in HALF. I still have tons sitting in my fridge and I just have no idea what to do with it. This is a unique take on a BBQ staple. Guests were impressed!

I read previous reviews on how much sauce the recipe made. I adjusted using 1 Tbs mayo, 3 Tbs sour cream, approximately 2 Tbs chopped cilantro (use less if your not a fan of it, and a few sprinkles of lemon juice because I didn't have lime. This was enough to slather on 4 ears of corn. My husband liked the flavor but suggested if I grill it again I do so with the husks on after soaking the corn and husk in water for a bit.
