This is an outstanding cake with the following adjustments:
I double the cake ingredients to make a 13x9 cake.
I replace water with very strong coffee
    I used melted coconut oil
I used 5 HEAPING tablespoons of cocoa.
Don't be afraid to stir, it won't effect the cake
Then I made a peanut butter frosting by mixing the following together:
    1 stick of softened butter
1/2 cup of softened peanut butter
    1-2 cups of powdered sugar
    Everyone LOVED IT!

My Grandma made this cake all the time but she added a fudge icing.
    1/4 c butter
    1/4 c milk
    4T cocoa powder
    1 c sugar
boil for 1 minuet whip and spread on cool cake.

We also like to make it with dark chocolate

Our family has made this recipe for years, although we increase the cocoa to 5 heaping tablespoons giving the cake a dark chocolate flavor. Use canola oil, stir in chopped pecans or walnuts and dust with powdered sugar. The cake is delicious, not too sweet or rich, and has healthful ingredients.
