Ingredients
- 1/4 cup butter
- 4 Granny Smith apples, peeled, cored, and sliced
- 1/2 cup brown sugar, firmly packed
- Pinch nutmeg
- 1/4 teaspoon ground cinnamon
- 1/2 cup raisins
- 1/4 cup apple juice
- 1 tablespoon cornstarch
- 1 tablespoon water
- 3 ounces crushed granola
- 4 scoops vanilla ice cream
- 4 dollops whipped cream
- 4 maraschino cherries
Directions
In a medium pan, melt the butter over medium heat. Add the apples and cook until browned. Add the brown sugar, nutmeg, cinnamon, raisins, and the apple juice and bring to a simmer. In a small bowl, combine the cornstarch and water and stir until the cornstarch is dissolved. Add the cornstarch slurry to the pan and bring to a simmer again. Cook while stirring until thickened, about 5 minutes.
Divide the mixture among 4 serving bowls. Top each bowl with crushed granola, a scoop of ice cream, a dollop of whipped cream, and a cherry. Serve immediately.
Cook's Note: This dish is better when the apple mixture is cooked 1 day in advance.

Used gala apples instead of granny smith; 1/4 cup smart balance margarine instead of butter
I did about 1/3 cup cane sugar instead of 1/2 cup sugar and did 1/4 cup unsweetened apple sauce instead of apple juice

It was delicious - highly recommend having it if you go to Grand Canyon. I will try and recreate this at home. Thanks for posting!

Just served it to my Mom and Fiance and they both loved it. Quick and Easy to make. If you're going to serve with ice cream 1/3 cup of brown sugar may be enough though and nuts are a quick and easy substitute if you don't have granola on hand. This ones a keeper for sure.
