Sausages, or hot dogs, and sauerkraut is a grilling classic. For this version we add shredded tart green apple to prepared sauerkraut to make a punchy apple slaw. Doubling down on the apple theme, we mound the sauerkraut on top of grilled chicken apple sausages, which we stuff into toasted rolls spread with spicy brown mustard.

Directions
Preheat a grill to medium-low. Grate the apple on the large holes of a box grater into a medium bowl. Add the sauerkraut, shallot, vegetable oil, sugar, mustard seeds and a big pinch of salt. Toss to combine, then stir in the parsley.
Oil the grill grates. Grill the sausages, covered, until marked and heated through, turning occasionally, 8 to 10 minutes. Serve the sausages on the rolls with mustard and the apple sauerkraut.
