Ingredients
- Ice
- 6 ounces light rum
- 12 mint sprigs, or spearmint, 8 roughly broken apart
- 6 tablespoons fresh lime juice
- 4 tablespoons sugar
- Club soda
- 4 slices lime
Directions
Place ice in beverage shaker then add in the rum, 8 broken up mint sprigs, lime juice and sugar. Shake well and serve over ice in a high ball glass. Top off each glass with a splash of club soda.
Garnish each with a slice of lime and a sprig of mint.

Jessica wrote - muddle and carry over the ice. Yes. You've got it girl. Otherwise most of the flavor is in the shaker. As to the pineapple reference - for you yes - for me not so much. For me sugar in a shaker takes to long. Simple Syrup is, well, simpler! Summer is finally arriving to the Pacific NW after a spring that was cool and damp. Can't wait to muddle through it!

Delicious! It tastes just like the mojito I had in a restaurant last month. I add a pineapple ring to make it a little sweeter, but it's really good without it, too!
