Ingredients

  • 1 cup orange blossom honey
  • 4 large eggs
  • 1 tablespoon orange zest
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch baking soda
  • Butter, for greasing

Directions

Preheat oven to 350 degrees F.

In a large bowl, whisk together honey and eggs until thoroughly integrated. Stir in orange zest. Sift together flour, baking powder, and baking soda. Add slowly to egg mixture. Lightly grease a loaf pan with butter. Add the mixture to the pan and bake. After 30 minutes check for doneness with a wooden skewer. (If it comes out clean, you are done. If not, give it another 5 minutes and check it again).

    You don't have to save it. It's a matter of continual association with sugary, airy nothings filled with additives of not so... wholesome kinds. We've gotten used to that in our culture, continuing to hype food and dishes. Food "decadence" is applauded. While we are "turning up the volume," "taking it to another level," "kicking it up a notch," etc., our health is slipping below most of the world. This is a good recipe and I appreciate its being shared. The insights on baking and cooking with honey, the adjustments required, are very helpful. There's not much of a nod toward nutrition in most food circles, everyone bowing to the god of flavor. Alton Brown is a contributor. He doesn't hit or miss -- he gives. And I am very thankful for that spirit and benefit much from his contributions. Read more

    You can make this cake better by...

    The first time i made this cake, it was just "okay" it didn't WOW me. It was a little too dough-y for me though. I... substituted the honey for 11/2 cups of sugar, so not only was it dough-y but also hard from the sugar. So what I did to make it better was add the juice of one orange (the same one I zested) and it came out much more moist and fluffy :) Read more

    Easy to Make...not fantastic

    This is as fool proof as baking can get...it should only take 15 minutes to get this into the oven. Note- it will take at... least 40 mins in the oven (as others have said before me). It came cleanly and looked nice but it just tasted ok...it's definitely not a cake and then again it's not bread. I would call it a less sweet, tasty version of banana bread you would have in the morning. The taste of the honey is overpowering and needs to balanced. If you eat this, you will definitely need to spread on some butter or jam or cream cheese. Good dish to practice your baking though. Just dont expect anyone to ooh and ahh over it.Read more

    I really wanted to like this, but it wasn't stellar. The flavor was good and I really like that it uses all honey since I... have family members that can't eat refined sugar. It had a chewey/spongie texture. I think that is because eggs are the only fat in it. I am going to try to adjust the recipe to add a little more fat since i think that will help.Read more

    I used regular clove honey and it still turned out delish! Oh, and I added 3/4 cup of chocolate chips and now the cake tastes... like those chocolate covered oranges that you whack first, then eat. Thanks Alton!!!Read more
