Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup sugar
  • 4 very ripe bananas
  • 1 teaspoon vanilla
  • 1/2 cup vegetable oil
  • 1 teaspoon cinnamon

Directions

Preheat oven to 350 degrees. In a medium bowl combine flour, baking soda and powder, salt. In a large bowl cream together eggs and sugar. Stir in mashed bananas, vanilla, oil and cinnamon. Stir in flour mixture, a third at a time, until just combined. Divide batter into two 9x5 loaf pans. Bake for about 1 hour

    Quick and easy Banana Bread recipe I've ever made!

    I had a bunch or bananas that ripened very quickly and figured I'd make banana bread with them. This was the third recipe on... Food Network that I laid eyes on and chose to make since I have all the ingredients in my pantry. This recipe makes ONE loaf! Don't know why the recipe says to divide the batter but perhaps it was a typo? Followed the instructions exactly and the results were perfect. Not too sweet (make sure you are using RIPE bananas). The loaf was moist fresh out of the oven (the oil must have had something to do with that) and it popped out of the non stick loaf pan that I used easily. Read more

    At the top of the recipe, the YIELD says 1 (one) loaf, but further down, it says to divide the batter into 2 (two) 9X5 loaf... pans. Will I need to halve the recipe for only one loaf, or will the recipe as written only really make one loaf???Read more

    everyone who has ever had this loves it, i bump up the number of bananas to 6 but that is because i typically have one or two... that are on the smaller side. also instead of regular flour i use self rising flour and cut out the baking powder, baking soda, and salt. this makes for less measuring and it has never failed me. its simple and tasty Read more

    I have been making this recipe for years and it's always delicious. I always get rave reviews whenever I bring it in to work... or to anyone else and have shared this recipe with many people. I like it because I can always make it with what I already have in my pantry whenever I have overripe bananas. I just pour all the batter into one loaf pan and bake for 50 minutes. I live at a high altitude and that works for me. Read more
