Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup sugar
  • 4 very ripe bananas
  • 1 teaspoon vanilla
  • 1/2 cup vegetable oil
  • 1 teaspoon cinnamon

Directions

Preheat oven to 350 degrees. In a medium bowl combine flour, baking soda and powder, salt. In a large bowl cream together eggs and sugar. Stir in mashed bananas, vanilla, oil and cinnamon. Stir in flour mixture, a third at a time, until just combined. Divide batter into two 9x5 loaf pans. Bake for about 1 hour

    This was very good. I live in Denver and did not need to make any changes due to the altitude. I made 2 loafs and cooked... for only 35 min. The loafs were done perfectly in this amount of time. Read more

    I added 4oz unsweetened applesauce and baked them in a muffin pan. baked in 23min and are absolutely fantastic!

    By Far The Best Recipe!!

    This is my very favorite Banana Bread recipe. I just add about a half a cup of chopped walnuts and YUM! It makes two loaves... but they are shorter and I agree the cook time should be more like 45-50 minutes so it doesn't dry out. We eat the first and freeze the second one for us or unexpected company...EVERYONE LOVES it!!!Read more

    Perfect Basic Banana Bread

    I thought that this was the perfect base for banana bread. I did however make some changes to suit my tastes. Also, i can... see where some people's was considered a tad dry. I used four full size bananas and it was certainly moist but not that wet texture some people prefer (which I don't care for anyhow- it's bread, not pudding). I probably added in 1.5 tsp of cinnamon. I also stirred in around .5 - 1 cup of chocolate chips. I know there was confusion on the 1 or 2 loaf directions- I made 1 loaf and baked for 1 hr and 20 mins. After pouring the batter into the pan, I sprinkled about 2 - 4 tbs of brown sugar on top to give it that bakery crust- yumm!Read more

    Great recipe. It makes one nice, big, tall loaf. I used whole wheat flour and incporated 1/4 cup flaxseed meal to boost the... nutritional value. I also substuted half the oil for applesauce and topped it with brown sugar and walnut pieces. Oh, and I baked it for 40 minutes. Watch the timer, an hour is too long. The result is yummy, moist, flavorful banana bread. I'm making this for the next pot luck! Read more
