This was really good. I 'halved' the recipe, since I was the only one eating it (everyone else wanted plain grilled salmon - BORING!, so I just boiled 1/2 cup sherry vinegar down to 1/8 cup, etc...it turned out great! VERY easy to make, and nice that it could be made ahead of time. I don't like plain grilled salmon, and this recipe, simple as it was, really added a ton of delicious, fresh flavors. Highly recommend it!

I love this recipe. Easy and delicious. I used chipotle chili powder instead of ancho because I had it on hand, and it was super spicy, so I reduced the red pepper in the tomatoes, which made a perfect balance. So wonderful!
