You can create up to five timers

Ingredients

  • 1 cup (2 sticks) butter
  • 1 cup sugar
  • 2 cups flour
  • 1 1/4 cup oatmeal (not instant)
  • Juice of 3 lemons
  • Zest of 2 lemons, chopped fine
  • Zest of 1 orange, chopped fine
  • 1 (14-ounce) can sweetened condensed milk

Directions

Cream butter and sugar, then add the flour and oatmeal to make the dough (it will be a little crumbly). Set aside. Stir juice and zest into milk. Set aside. Butter (or spray) a 9 by 13 inch pan. Press two-thirds to three-quarters of the dough into the pan. Spread lemon/milk mixture evenly over the top of the dough. Sprinkle the remaining dough (kind of like streusel) over the top. Bake at 350 degrees for 30 to 35 minutes until golden. When cool, slice into 1-inch squares.

    Everybody I meet loves these - the oats in the crust/streusel make them so much more delicious than the classic lemon bar. So buttery and delicious. I make sure to make a thick bottom of crust - otherwise there's too much topping. I make sure also to use a shallower pan so the topping can brown up nicely - too deep a pan and it all looks too beige. I use at least 7 tablespoons of lemon juice - I love a very tart lemon bar - the condensed milk can handle almost any amount of juice mixed into it and it's always baked up fine. When cool sometimes I sprinkle yellow decorator sugar on top - as the only complaint I find is they don't really look lemony - but they are very lemony - pucker up!

    Outstanding! I followed the recipe exactly as written. I wondered how much lemon juice and zest to use and ended up adding a half a cup of lemon juice and the zest of 2 large lemons.
