Ingredients
- 2 cups onion powder
- 2 cups garlic powder
- 1 cup cayenne pepper
- 1/2 cup white pepper
- 1/2 cup black pepper
- 1 cup dried thyme
- 1 cup dried oregano
- 2 cups table salt
- 1 cup paprika
- 1 cup ground cumin
Directions
Blend well, cover and store.
Black Magic seasoning is an essential part of Southern cuisine and my kitchen is never without it. This seasoning adds extra kick as 1 of the components of Marlowe's BBQ dry rub, but it is also fabulous by itself.
Try spicing up your chicken or fish by adding a liberal amount of this seasoning before grilling or pan-frying.

Whether I use this rub alone or in the Marlow's dry rub recipe as a required ingredient, it is ALWAYS a hit! I highly recommend that recipe too. This rub is spicy, but not too hot to use alone in our opinion. If you don't like spicy just use the other Marlow's dry rub recipe. I've used this on many occassions when making beef, pork even chicken. I roast with it as well as grill. I just keep it on hand and because of the batch size I have enough to share when people ask how I "made that wonderful...." It's always appreciated and I can't even tell you how many times I've been asked for it. Now I email the recipe off this site following the links and just give instruction for cooking. I've used this for meat serving up to 40 people at once, roasting the meat in a large electric turkey type roaster. Very versatile!

Grew up in Memphis and still live here. nothing on the planet like Memphis BBQ. I've traveled every most of Europe, the Americas, the Carribbean, and every US city and state famous for BBQ; Texas, the Carolinas, Kansas City, and of course, Memphis. There's no place like home, true enough, but taste-wise, there's nothing close to the heavenly smoky taste
of Memphis style BBQ and the various versions of Memphis sauces and dry rubs.
Guy: great job on DDD's coverage of our local specialty. Marlowes is good stuff and nobody beats Cozy Corner's Cornish hens...but; three other phenominal places you didn't get-of which Food Network has covered only one: Corky's BBQ- the original Poplar Ave location which has hosted numerous celebs and Presidents, The Germantown Commissary ("So good you'll slap your mamma'l, and of course, Neely's! Yeah, y'all know about Neely''s.
So come to Memphis and take a BBQ tour; better yet, visit us during the Memphis in May festival. Nothing in the world like it.
