Ingredients
- 1 cup toasted almonds, coarsely chopped
- 1/2 cup dried cherries, coarsely chopped
- 6 ounces dark chocolate, finely chopped
Directions
In a medium bowl, toss together the almonds and the cherries. Line a baking sheet with waxed paper.
Melt half the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the top pan. Remove the double boiler from the heat and stir in the rest of the chocolate. Remove the top pan with the chocolate in it, gently wipe the bottom of it and set it aside for a moment. Replace the simmering water in the bottom pan with warm tap water. Put the pan of melted chocolate on top of the warm water. This will keep the chocolate at the right temperature while you make the clusters.
Stir the fruit-nut mixture into the chocolate. Spoon out heaping tablespoon-sized clusters of the chocolate mixture onto the baking sheet about 1-inch apart. Put them in the refrigerator to set for 15 minutes. Store and serve at room temperature.

Made these for my family and they were simply delicious. I skipped a step and just melted all the chocolate at the same time and then folded in my other ingredients and it still turned out. These were a great fix as we are watching our cholesterol and it seems every dessert either calls for flour, eggs, or butter.

These are great with dried strawberries which you can get in the grocery store where all other bagged nuts and dried fruits are. I as well, used slivered almonds so as not to have to contend with chopping and takes the skin out of the equation which just doesn't go. As far as the chocolate preparation seeming to be a lot of work, simply melt the chocolate when you are ready to mix it in with the nuts and fruit, that way there it is just ready and you don't have to get it ready and then do something else to keep it ready. As well, you can get dark chocolate chips which will have the exact same effect as chipping/cutting a big chocolate chunk. It's not as complicated as it seems.

These are so great, everyone I made them for has asked for the recipe! The first time I didn't read thoroughly and didn't toast the almonds. This time I have-both dare great and crunchy! Now I make 3X the recipe so I can give some to friends. I use a teaspoon instead of a tablespoon for slightly smaller clusters. Absolutely delicious, and a bonus that's it's nutritious! I will make them again for Valentine's Day-perfect treat!
