Ingredients
- 1 dozen eggs
- 2/3 cup silken tofu, drained
- 1 tablespoon mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 teaspoon hot sauce, plus more to taste
- 2 teaspoons prepared horseradish
- 2 tablespoons chopped chives
- Salt
- Freshly ground black pepper
- 1/4 teaspoon paprika
Directions
Place the eggs in a large saucepan and cover with water. Place over high heat and bring to a boil. Reduce the heat to low and simmer for 9 minutes. Remove the eggs from water and run under cold water for about 1 minute or until cool enough to touch. Peel eggs under cold running water.
Slice the eggs in half lengthwise. Scoop out the yolks and discard 6 of them or save for another use. Set aside the whites.
Place the remaining yolks in a medium bowl and mash with the tofu, mayonnaise, mustard, hot sauce, horseradish and chives. Season with salt and pepper.
Spoon the mixture into the corner of a plastic bag and snip off the end. Pipe the yolk mixture into the egg whites. Arrange on a platter and sprinkle with paprika.

This is supposed to be healthy? Soy is not healthy. Plus, the egg yolks that you removed, is a healthy fat that people need. The yolk contains most of the vital nutrients an egg offers! These kinds of "healthy" solutions she suggests are part of why people are so sick nowadays. These are the things I study and research, and so I'm sorry, but this drives me crazy!! My friend wanted to try this, so we did. That's how I ended up here. She wanted to try tofu for the first time and can't eat enough deviled eggs! She ended up not liking these, and I didn't like the taste or consistency of this recipe either, and this is regardless of my view. My suggestions would be to stick with the egg yolks, and to recommend olive oil mayo. Canola oil is full of omega-6 and not the good omega-3 fatty acids. Yes they do have mayo in stores made of olive oil and not canola oil. :-

To peel eggs.. after boiling your eggs Drain water
replace with cold water and ICE.. add ice if needed
and let sit for 20-30 minutes.. THEN peel.. I get great
results from this technique! Thanks MS!

Not a real fan of these, would stick to the norm for us, pickle relish and mustard. As far as pealing hard boiled eggs, I only use eggs that are at least a week old.
