Ingredients

  • 1 1/2 pounds sweet potatoes, peeled (2 medium potatoes)
  • 1 tablespoon canola oil
  • 1/2 teaspoon salt, plus more, to taste
  • Cooking spray

Directions

Preheat the oven to 450 degrees F.

Cut the potatoes lengthwise into 1/4-inch thick matchsticks, and toss with the oil and 1/2 teaspoon salt. Spray a baking sheet with cooking spray. Arrange the potatoes in a single layer on the baking sheet and bake until the "fries" are tender and crisp, about 30 minutes.

Season with additional salt, to taste. Serve immediately.

    So Good!

Rated: 5 stars out of 5
I have made this recipe so many times I have added my own changes. iIs really good the way its witten here but now I make it... using EVOO, I cut the potatoes bigger almost like steak fries, and I cook it on 375. I also toss them with the spice mixture from an Emeril recipe when they are done. It is about a tablespoon of brown sugar, a pinch of salt and chili power, and about half a teaspoon of cinnamon. We love them!Read more

    Yummy

Rated: 5 stars out of 5
I made a ham for dinner with these and Ellie's recipe for dirty broccoli. I cut the fries thin like others have suggested... and flipped them after 10 minutes. I only used one large sweet potato and they were done in a little less than 20 minutes. Mine were sweet, a little crispy, and very yummy. My husband loved them and I did too. There were none left after our meal, always a good sign!Read more

    Yummy Fries!

Rated: 5 stars out of 5
I loved the delicious sweet taste. They didn't all get crisp, but were all delicious. After reading the reviews, I decided... to turn the oven down a little to 425? and it made fantastic fries. I topped a salad with the leftovers the next day and that was delicious also. Read more

Soggy and burnt at same time

Rated: 2 stars out of 5
We watched her make these on tv and they looked crisp and beautiful. I should have known, though, that sweet potatoes never... come out that way! Half the fries were burnt to black and the other half were soggy. I cut them evenly too, and I didn't use the little odd-shaped ends, and this happened with me watching them closely. I don't really fault Ms. Krieger--sweet potatoes just don't get very crisp easily. But if you're making this recipe, don't expect something like you'd get with deep frying!Read more

    AWESOME Fries!!

Rated: 5 stars out of 5
The key to making these is to cut them really really thin...like shoestring potatoes! They are a delicious and healthy cheat... treat!!! I'm in heaven!! 350 degrees for about 30 minutes was perfect. Read more

    tasty flavor, not crunchy

Rated: 4 stars out of 5
the flavor was good. They were not crunchy, as I expected. The ends of many of them burned... even though i took them out... 10 minutes earlier than the recipe called for. I will likely cut them thicker next time.Read more
