Ingredients

  • 1 roaster chicken
  • 2 cups water
  • 1/2 cup paprika
  • 1/2 cup granulated garlic
  • 2 cups lemon juice
  • 1/2 cup lemon pepper
  • 1/4 cup Italian spice
  • 2 teaspoons salt

Directions

Preheat the oven to 325 degrees F. Combine all ingredients together to prepare the marinade. Dip the whole chicken in the marinade. Cover chicken completely with marinade. Let sit for 4 to 5 minutes. Place chicken on a sheet pan. Cook for 50 minutes uncovered, or until the chicken is cooked through and the juices run clear.

    While it seems like a lot of paprika and lemon pepper and the like, this recipe makes for one delicious dinner. We marinate... our chicken for about 10 minutes and bake it without the marinade and it turns out wonderfully. I think the recommended time of marinating the chicken is so quick because of the acidity of the marinade. Regardless of the marinating time, this is the most moist and tasty chicken we have ever fixed ourselves. A definite keeper!Read more

    This chicken was excellent! Very moist and tasty. I did marinate the chicken longer then the 5 minutes, actually about 1... hour. I cooked the chicken in a roaster with the marinate. It was so easy to make and excellent in taste. Definitely a keeper in my recipe book.Read more
