Ingredients

  • 2 egg whites
  • 6 tablespoons cold water
  • 1 1/2 cups sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract

Directions

In a stainless steel bowl, combine the egg whites, cold water, sugar, and cream of tartar in the top of a double boiler. Whisk until smooth. Place over boiling water and whisk constantly or beat with a hand mixer until the frosting is stiff and holds peaks, about 7 minutes. Remove from the heat and whisk in the vanilla. Let cool, whisking often.

    I made 1/2 this recipe because I only had a few cupcakes to frost. I was scared to make this because it looked a little... complicated, but it ended up being pretty easy. I didn't use a stainless steel bowl, so it took a little longer to get stiff peaks.Read more

    I use this on a recipe that calls for baking after the frosting is applied. It is the only one that I found that can fill... the bill. I use it on Special Chocolate Bars - 1 pkg Fudge cake mix, 1/2 C oleo, 2T H2O: mix and press into 9"X13"pan, cover with frosting, then sprinkle w 1/2 C each choc. chips & pecans - bake 350 for 20-25 minutes - yield 12 bars.Read more
