In a stainless steel bowl, combine the egg whites, cold water, sugar, and cream of tartar in the top of a double boiler. Whisk until smooth. Place over boiling water and whisk constantly or beat with a hand mixer until the frosting is stiff and holds peaks, about 7 minutes. Remove from the heat and whisk in the vanilla. Let cool, whisking often.

    I still remember my Grandma making this icing when I was a little girl in the early 50's. I used to make it when my daughter was a little girl..in the 70's. I tried this recipe for topping a moist white cake and it was perfection. This is a simple and good recipe for this icing. The beautiful peaks and glistening sheen is part of what makes it special...and gorgeous. This is an icing that was used before people had more money to spend on more costly icings...so it is 'coming around' again. Makes anything lovely and is delicious. Oh, and I've used this more than once to make
    a DollCake. You can make her a princess in five minutes..all little girls love them.

    I did not like this frosting at all. First of all it should have been called the 15 minute frosting. It also had a funny taste and the texture was soupy. I didn't like the shiny sheen the frosting had. I probably did it wrong but i followed the recipe exactly. I will not try this recipe again.
