Quick Apple Streusel Coffee Cake

Ingredients

For the cake:

  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable shortening, melted
  • 1 1/2 cups chopped Granny Smith apples (2 to 3 apples)

Streusel Topping:

  • 1/2 cup sugar
  • 1/4 cup flour
  • 2 tablespoons butter
  • 1/2 teaspoon cinnamon
  • Accompaniment: vanilla ice cream

Directions

Sift flour and measure then sift together with the other dry ingredients. Beat the egg, then add the milk and melted shortening. Pour the wet into the dry then add the raw apples and mix well. Pour into a well greased 8-inch square pan. Mix together the streusel ingredients and sprinkle over the top of the batter. Bake at 400 about 25 to 30 minutes or until a toothpick inserted comes out clean.

    I have made this cake 3 times now, and the 2nd & 3rd time I put 1/2 the batter then took roughly 1/4 of the streusel and... sprinkled it to cover then added the rest of the batter and topped with remaining streusel. Got raves. Read more

    I've made this cake several times and it is always a hit with family and friends. I used to watch Gale Gand's show and love... her desserts. The first time I made it I used white sugar for the topping, after that I used all brown sugar. The brown sugar topping turned out better for me. Also used melted butter instead of shortening.     After browsing through many recipes I finally decided to try this one because it seemed easy to do. I was very happy with... the outcome. It is a delicious steusel cake, moist and fluffy. Anyone can make it. I did change a few things after reading others reviews--I increased the cinnamon to 1 tsp. in the cake, heated my milk for 30 sec., and added a splash of vanilla. I did not have Granny Smith apples so I used Empire. I am sure just about any apple would do. I did use half while sugar and half brown sugar in the topping. It was crunchy and yummy but next time I might use all brown sugar as I would do with a regular coffee cake. It was a hit with my 9 year old son!Read more

    My college sophomore daughter needed something to share with her Air Force ROTC class during a breakfast meeting. She... tripled the recipe for two 12'x8' disposable foil pans. We didn't have enough apples, so she used 2 apples and a cup of applesauce. She was confused about the butter mixing with the struesel topping so I showed her how to "cut" it in using two knives. Other than that, she did it totally on her own. Next time, will follow some of the other raters suggestions about brown sugar and the spices. A definite WOW!!Read more
