Ingredients
For the cake:
- 1 1/2 cups flour
- 2 1/4 teaspoons baking powder
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable shortening, melted
- 1 1/2 cups chopped Granny Smith apples (2 to 3 apples)
Streusel Topping:
- 1/2 cup sugar
- 1/4 cup flour
- 2 tablespoons butter
- 1/2 teaspoon cinnamon
- Accompaniment: vanilla ice cream
Directions
Sift flour and measure then sift together with the other dry ingredients. Beat the egg, then add the milk and melted shortening. Pour the wet into the dry then add the raw apples and mix well. Pour into a well greased 8-inch square pan. Mix together the streusel ingredients and sprinkle over the top of the batter. Bake at 400 about 25 to 30 minutes or until a toothpick inserted comes out clean.

This was so easy and is going in my "go-to recipe" binder. It uses only kitchen staples and can be thrown together at the last minute. The cake was very moist and balanced well with the streusel topping. I did make a few changes that others suggested.
*used butter rather than vegetable shortening
*used brown sugar rather than white in the streusel topping
*added a dash of nutmeg to the topping
*baked at 350F for about 40 minutes instead of 400F
**Might add nuts to the streusel topping next time around

This was delicious! And even better the next day. I did use supremebaker's suggestions on substitutions & baking temp (see previous review. I also used dark brown sugar instead of light and added 1 tsp of vanilla. The apples were off of our tree, so they were super-fresh. This recipe will be a family favorite for sure.

As written I would only give this coffee cake recipe 3 stars, but with a little tweaking I brought it up to a 5 star level! The changes I made were substituting butter for the shortening, adding an additional cup of finely chopped apple (for a total of 2 1/2 cups, and substituting light brown sugar for the granulated sugar in the streusal topping. The brown sugar gives more depth of flavor to the streusal along with a heartier texture and a warm butteriness. I also baked this at 375 for 25 minutes as 400 made the topping brown too quickly. This is NOW my go to recipe for apple coffee cake!
