Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone baking sheets.

Put the flour, sugar, baking soda, pepper, and thyme into a bowl and whisk together to combine. In a small bowl, whisk together the olive oil, milk, lemon juice, and zest. Add the liquid ingredients to the dry ingredients, stirring with a wooden spoon until you form a nice smooth dough.

Roll heaping teaspoonfuls of the dough into balls. Place them about 2 inches apart on the prepared baking sheets. Bake the cookies about 12 to 15 minutes, or until they are browned around the edges. Let the cookies cool for a few minutes and then transfer them to wire racks to cool completely.

    Forget about the recipe trolls! This recipe is to DIE for! I wanted lemon cookies and I just happened to have everything I needed to make this. O my F-ing G! These are really good!

    These are fabulous as is, but so much fun to experiement with. I changed to rosemary and added dried blueberries. I'm also thinking of adding some other spices, perhaps some cumin or coriander.

    They are definitely a 'love it' or 'hate it' cookie. I've found that small children do not care for them and those with un-sophisticated palates don't usually like them either.

    One of my very favorites. I wonder what dark chocolate would be like?!

    I altered this recipe and it is deliciousI omitted the pepper, zested and juiced 2 lemons instead of one (more of a lemon flavor and added 3 tablespoons of goat yogurt instead of milk and omitted the thyme and put 2 tablespoons of fennel seeds. It is delicious and savory! My 5 year old loved them! And, I used organic ingredients and spanish olive oil from Trader Joes.
