Low Carb Turkey and Swiss BLT Roll-Ups

Ingredients

  • 4 teaspoons heavy mayonnaise
  • 1 head iceberg lettuce (4 outer leaves only)
  • 1/4 pound sliced turkey (no sugar added)
  • 1/4 pound precooked bacon strips (8 slices)
  • 1 tomato, thinly sliced to make 8 slices
  • 1/4 pound sliced Swiss cheese
  • Toothpicks

Directions

Spread about a teaspoon of mayonnaise on the inside of a large single outer leaf of iceberg lettuce. Place leaf on the counter and top with 2 slices of turkey breast, 2 bacon slices, 2 slices of cheese, and 1 to 2 tomato slices. Roll up like a burrito. Close with toothpicks and cut into pinwheels. Repeat to make 4 roll-ups.

Cook's Note: Try heating all but the lettuce and tomatoes in the microwave, and then roll up in the lettuce for a hot wrap with melted cheese.

    I am not on a diet, but while looking for something to make with left over roast turkey I tried this, so so very good, it... deserves 10 stars! the only changes I made was provalone cheese instead of swiss because thats what I had, my mouth waters just thinking about these, next time I will add pita pockets so they will be easier to eat. more George recipes PLEASE!!!!Read more

    I hate iceberg lettuce, a total waste of money. Use butter/bibb/boston, or green or red leaf, you might also experiment with... endive, especially the hearts. Also, fresh spinach leaves could be interesting. It's a really simple recipe, so you need to "doll" it up a little. Some flavored sauces could give flair, e.g., mayo with chipotle, mustard, horseradish (spelling?), worshestire, steak sauce, BBQ sauce. Roll-ups can be done with almost any type of seafood, poultry, beef or pork. (They can also be done vegetarian by adding some tofu or beans, kid-friendly by doing PB&J, etc.) And don't ignore the healthier versions of thin breads; a little carbs are OK, just don't go overboard. Also, don't think you have to rely on mayo only; you can use plain yogurt, sour cream (just a little added to the base), cottage cheese, chevre (goat's cheese), neufchatel. Use your imagination. Toss in a small amount of fruit (mandarin oranges, grapes, blueberries, raspberries, apple chunks, and on and on. . . .) Try something exotic (figs, a teensy puff of curry powder or chili powder, cinn, allspice, mace, cardamom, . . . . ) Don't be afraid to experiment unless you know that the majority of the people you're feeding will NEVER go for that. Often, they won't even detect what you added, just that it's different, unique, interesting. Think occassion and weather. Tailgaiting? Go for the heavier meats. Summer? Go light.Read more

    I really liked this one a lot. So very easy. I am not big on swiss cheese so I put cheddar in it's place. Oh so good. I also... put three pieces of bacon in stead of two. All I can say is YUMMY. Keep it up George. You are helping me stay low carb!Read more
