Ingredients

  • 1 storebought pizza dough
  • 2 tablespoons butter, melted
  • 4 tablespoons Cinnamon-Sugar, divided, recipe follows
  • 2 cups mascarpone cheese
  • 1 tablespoon heavy cream
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest (from 1 lemon)
  • 2 cups mixed berries

Directions

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

Using a rolling pin, roll out the pizza dough to a thickness of about 1/4 inch. Transfer the pizza dough to the lined baking sheet and brush the dough with the melted butter. Sprinkle with 2 tablespoons Cinnamon-Sugar and bake until golden brown, about 10 to 15 minutes. Cool the pizza crust on a wire rack.

Meanwhile, in a medium bowl, mix together the cheese, cream, lemon juice, and zest.

Spread the cheese mixture over the cooled crust. Top with mixed berries and sprinkle with the remaining Cinnamon-Sugar. Slice like a pizza and serve.

Cinnamon-Sugar:

1 vanilla bean

1/2 cup sugar

1 tablespoon ground cinnamon

Cut the vanilla bean in half, lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add sugar and cinnamon and stir to combine. Set aside in a small serving bowl.

    I made this recipe for New Year's Day Breakfast. My cousin is a vegatarian so I decided to do a vegatarian new year style... breakfast. The kids and adults loved this one.     I love Giada, but I'm a person who will substitute ingredients if possible to lessen the guilt. For the breakfast pizza I... used splenda sweetner instead of regular sugar, fat-free cream cheese instead of mascapone, and half n half instead of heavy cream. I also added some kiwis to the mix of berries. I used frozen berries and thawed them before use because each package of berries fresh are $4 each versus the forzen package all mixed in for $3. I also made two small pizzas out of the dough. The hint of lemon in the cream was fantastic. I will be making this pizza again very soon.Read more

    Just made this for breakfast Christmas morning...very light and yummy. A wonderful treat. It was my first time using... Mascarpone cheese and I thought it was delicious. Thicker and sweeter than cream cheese, a welcome surprise. I only used half (1cup) because it was pretty pricey at my grocery store, but I think it was just enough. Using 2 cups would have made a layer about 1 inch thick which would have been just a little too much for me! I also added just a touch of sugar to the cheese to cut some of the lemon tartness. My dough was a little tough, but I think that's because I followed the 350 degree directions from this recipe instead of the 450 degree pizza dough actual directions - my own fault. I also didn't have vanilla bean, but I just added about 1/2 t vanilla extract to the sugar mixture (I only made half that too...and still had some left over). Great flavor in the sugar and it didn't burn either. Overall, a wonderful, delightful treat!Read more
