Ingredients

Skewers:

  • 24 grape or small cherry tomatoes
  • 3 ounces feta cheese, cut into 12 (1/2-inch) cubes
  • 12 pitted kalamata olives
  • 1/2 small red or sweet onion, cut into 12 (1/2-inch) pieces
  • 2 teaspoons chopped fresh oregano leaves

Directions

Special equipment: 12 (6-inch) bamboo or wood skewers

Vinaigrette:

  • 2 teaspoons lemon juice
  • 2 teaspoons red wine vinegar
  • 2 teaspoons chopped fresh oregano leaves
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper

For the Skewers: Thread the skewers starting with a tomato, then a piece of feta cheese, an olive, a piece of onion and finish with another tomato. Repeat with the remaining ingredients.

For the Vinaigrette: In a small bowl, mix together the lemon juice, red wine vinegar and oregano. Whisk in the olive oil until the mixture thickens. Season with salt and pepper, to taste.

Arrange the skewers on a serving platter. Spoon the vinaigrette over the skewers and sprinkle with the chopped oregano.

    Made this for a BBQ and everyone loved it. Presentation on a rectangular platter was amazing. I had two kinds of feta... cheeses, one was a bit crumbly, but the other was more compact. The latter one was better to skewer. Will certainly make this again. Thanks.Read more

    A tip for the onions

    I haven't made this yet, but I can tell you that red onions can be overwheling when served raw. I soak my onions in ice... water for 10 minutes before using them in any recipe that calls for raw onion. Try it and you'll be amazed at the difference.Read more

    This is so easy. It is okay nothing too special. When Giada made them in the epsidoe she use big chunks of red onion, but... when she served her guests you coudn't see any onion on the skewers. I used a slice of yellow bell pepper instead, the color was nice and a little bit of bite. IRead more

    I made this for a pot luck for Greek Easter this year. Luckily I put it together the day before so I didn't stress too much... when the first batch of Feta Cheese wouldn't stay together when I tried to put them on the skewer. I tried the next block of Feta at room temperature & made larger cubes & it worked perfectly. I got 12 cubes out of 1 block of cheese. It was a hit at the party, I was hearing about what a great idea it was & how great the vinigraette was for the rest of the day. Thanks Giada! Read more
