Ingredients

  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup plus 2 tablespoons sugar
  • 2 eggs
  • 1/2 cup oil
  • 3 1/2 bananas, very ripe, mashed
  • 2 tablespoons creme fraiche or sour cream
  • 1 teaspoon vanilla extract
  • 2/3 cup walnuts, toasted and chopped

Directions

Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.

Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, creme fraiche, and vanilla. Fold in dry ingredients and nuts. Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.

    I added 1/2 cup of mini semi sweet chocolate to the mix and top it off with a mix of sugar, cinnamon with crushed walnuts,... and let me tell you, that made the cake so delicious. My husband can't stop raving about it and neither can I! Can't wait to make it for thanksgiving! Thanks!!!Read more

    To be fair, I modified this recipe quite a bit. I used 3 bananas, cut the sugar back to 1/4 c. brown sugar and 1/4 c. white... , I used applesauce instead of oil, and added some nutmeg and ginger. I ALSO added a cup of chocolate chips... Final Verdict???? DELICIOUS! It's easy to make this bread lower in fat and calories, even though I sort of negated it with the chocolate chips. But feel free to try my modifications- I think the bread is really nice- lightly sweet and it set up really well when I baked it for about 50 min. Read more

    This banana bread is very tasty and moist. I added a small amount of grated nutmeg for more flavor. I also substituted 1/4c... apple sauce and 1/4c oil for 1/2c oil. I'm not sure what it tastes like with the oil, but the substitution worked perfectly. The bread was moist and flavorful. My dorm buddies even had them with sliced cheddar cheese for breakfast and it tasted great!Read more

    I was so impressed with how basic and easy this was, with ingredients I already had at home! I switched half the bananas for... pumpkin puree and substituted the 1/4 teaspoon cinnamon for 1 full teaspoon pumpkin pie spice and it was SO GOOD. I also used a bundt pan to bake the batter because some of the other reviewers said it was too much batter for 1 loaf pan. I baked it for exactly 44 minutes and it is SO divine. I still have a piece left and I'm going to bake more so we don't run out...its that good! The toasted walnuts give it an extra depth and the sour cream keeps it extra moist. When I first made the batter I was a little worried because it seemed to be a little soupy, but it baked perfectly! I've tried many banana bread recipes and I'm happy to say that my search is OVER!Read more

    I would reccommend anyone to try this recipe. Not only is it super easy but it's Fabulously Delicious!!! I had some banana... that we're too ripe to eat so I decided to attempt a banana bread so not to waste the bananas. I got online and discovered this recipe. It seemed easy enough for some like myself who rarely ever bakes. To my surprise, the banana bread was incredible. My neices and nephew ate it up too!     I have several banana bread recipes and this one is my new favorite. The oil produces the moistness and toasted nuts (I... sauteed pecans in butter on the stove) provided intense nutty flavor! I split the recipe into two pans then added the nuts to one and 2/3 c flour-coated chocolate chips to the other. This way, one could be more dessert-like (or for teenage boys :) while the other is good for breakfast. My cook time was the same (about 45 min) but check on them using a toothpick since ovens temps vary. These recipe variations were both yummy, but be careful as they are highly addictive!Read more
