Ingredients
- 16 ounces chickpeas
- 6 ounces roasted red bell peppers
- 1 jalapeno, seeded, diced
- 1 tablespoon chopped garlic
- 3 tablespoons chopped cilantro leaves
- 1 teaspoon paprika
- 3 tablespoons chopped onion
- 1 teaspoon freshly cracked black pepper
- 1 tablespoon chipotle pepper in adobo
- 1/4 cup extra-virgin olive oil
- Toasted pita bread, for serving
Directions
Mix all ingredients, except olive oil and pita bread, in food processor until pureed, then slowly add in olive oil.
Let set up for 1 hour prior to serving.
Serve with toasted pita bread.

I love this hummus. I only changed a few things. I roasted the red peppers myself, so i chopped up the leftovers and put it on top with the evoo. I also added tahini and lemon juice to the recipe. It was amazing even before allowing it to rest.

Great recipe! I noticed the comment below from ES123 and I'm thinking that she or he did not give it time to sit. I tasted it as soon as I finished and it was "good" not great. But as the instruction said I then let it sit about an hour and it was much different....great! A nice texture, and good amount of spice. REALLY good!

I followed this recipe exactly (except for leaving out the jalapeno and it was pretty awful. I'm not sure why this was called roasted red pepper hummus. There were so many southwestern flavors that it was no longer hummus by the time it was done, and you couldn't even recognize the roasted red pepper. I'm going to search for a plain hummus recipe and just add roasted red pepper.
