I saw something like this being sold for outrageous amounts of money in the fish case at the local grocery store, and I thought, "I can do that!"

Ingredients

  • 3 ounces cream cheese, softened
  • 3/4 cup crumbled feta
  • 2 scallions, thinly sliced, including the crisp part of the green
  • 1/2 cup fresh spinach, chopped
  • 3/4 pound salmon fillets, cut into 2 pieces
  • Olive oil

Directions

Preheat the oven to 350 F degrees.

In a bowl, combine the cream cheese and feta, mashing and stirring with a fork until well blended. Add the scallions and spinach and combine well. Spread the mixture evenly over 1 salmon fillet. (The filling will be about 3/4-inch thick.) Top with the second salmon fillet. Brush both sides with olive oil, turning over carefully with a spatula, and place on a shallow baking pan. Bake for 20 minutes; test for doneness with a toothpick. To serve, slice carefully with a sharp, serrated knife.

    The whole family loved this recipe! I always soak my salmon in a little milk first (for about 30 minutes and it will take an "fishy"ness out of it...

    I made this recipe last night and I absolutely loved it. I didn't stack the salmon according to the instructions but I did place them side by side and they came out great. I could not believe how wonderful the flavors were and how easy it was to make. I think next time I'll add a bit of garlic to my filling.

    I loved the idea of this recipe and I will still definitely use the filling in chicken breasts or maybe in giant pasta shells. I added a squirt of lemon juice and some garlic to my filling also. The not so great part of the recipe: with the salmon stacked like that, the bottom piece of fish cooked through while the top piece of fish was almost raw. Overall, it left something to be desired...
