Ingredients

  • 4 pounds salted butter, clarified
  • 4 to 6 fresh Maine lobster tails
  • 3 garlic cloves
  • 4 fresh lemons, juiced

Directions

Cook's note: This MUST be served warm

Reserve 1 cup of clarified butter and try to keep warm.

Place lobster tails in a large pot and cover with the remaining butter. Add 3 cloves of garlic to the pot. Poach on a low heat until the lobster shell changes color and meat is cooked. Allow to cool slightly and harvest meat from tails. Chop meat into bite-size pieces.

While meat is still warm, assemble the shooters. In shot glass pour a bit of the reserved warm butter into each glass. Top with lobster meat and drizzle with a bit of the lemon juice

Great recipe! I modified it by using a deeper pan and less butter. I used two lbs. of *unsalted* butter and clarified it myself. I added salt later. This was wonderful for a business meeting and clinched the deal!

I can't thank you enough for such a great recipe for my husband's 50th Birhtday Wine and Cheese Party. Since there was no meal offered, this serving size was ideal for an elegant detail to our intimate, yet memorable get-together. I made enough to go around several times and our friends were RAVING about this everytime I'd come around with it. Will definitely repeat at all intimate reunions. Thank you, Thank you, Thank you.

Paula, I am hosting a large event in savannah and would love to have your private chief make these fabulous lobster shooters. Could you help me out.
