Heat a large skillet over medium high heat. Add extra-virgin olive oil and butter. Add mushrooms and season with salt, pepper and thyme then cook 15 minutes until evenly browned and tender. Add wine and deglaze the pan. Add parsley and transfer mushrooms to a serving dish.

    I used dried thyme and it's a nice flavor addition, but I agree with the previous reviewer that the wine really isn't necessary. It hides the flavor of the mushrooms which you really don't want to do unless you don't like mushrooms, but if you didn't like mushrooms you probably wouldn't be looking at a recipe to saute them, would you?? :
