Ingredients

  • 1 tablespoon extra-virgin olive oil, 1 turn of the pan
  • 2 tablespoons butter
  • 1 1/2 pounds crimini mushrooms, brushed clean with damp towel
  • Salt and pepper
  • 3 tablespoons fresh thyme leaves, chopped
  • 1/2 cup dry red wine
  • 2 tablespoons chopped fresh parsley leaves

Directions

Heat a large skillet over medium high heat. Add extra-virgin olive oil and butter. Add mushrooms and season with salt, pepper and thyme then cook 15 minutes until evenly browned and tender. Add wine and deglaze the pan. Add parsley and transfer mushrooms to a serving dish.

    Needs help, then it's PERFECT!

    I added a few cloves of minced garlic, more butter than called for (I added some when heating with the olive oil, more in the... middle of preparation, then some at the very end to give more richness to the flavor) and added a lot of salt only at the end (after I reduced the wine). I substituted rosemary just because we were eating a steak with a rosemary rub, so I wanted to carry the flavors through. I reduced the wine until there were barely any juices left so the mushrooms were beautifully glazed with this fantastic flavor that could have been found in an expensive restaurant. Excellent start to a recipe but it's always fun to play during preparation to make a better dish!Read more
