Ingredients

Fritters:

  • 3 eggs, beaten
  • 3/4 cup milk
  • 1/4 cup brown sugar
  • 3 cups baking mix
  • 3 ripe bananas, diced
  • 2 cups canola oil, for frying

Spiced Glaze:

Directions

For the fritters: In a large bowl, whisk the eggs with the milk and sugar until blended. Stir in the baking mix and bananas until just combined.

Heat the canola oil in a large, heavy-bottomed skillet over medium heat. Using a small ice cream scoop, drop the batter into the skillet. Fry in batches until golden brown and cooked through the center, 2 to 3 minutes per side. Remove from the oil and allow to drain on a wire cooling rack set over a baking sheet.

For the glaze: Whisk together the powdered sugar, 1/4 cup water and pumpkin pie spice.

While the fritters are still warm, pour the glaze over top. Allow the glaze to set up slightly before serving.

    I made the fritters as written/no changes. The fritters are good. the problem is the glaze. the spice is too strong, needs milk instead of water and needs vanilla. I added 1/2 tsp vanilla, traded water for milk and cut the spice in half

    I made these and came out with over 20 friters and all I hade was 1 banana (following what I had read previously They truly are delicious but mine came out really greasy. I still gave this recipe 5 stars because (1maybe it's just me that's not good at frying things (2 I loved being able to make my own baking mix and (3these are so easy to make. I did also cut back on the pumpkin pie spice as it truly is too much for my liking and i love pumpkin pie spice. Thank you to all who stated this in past comments and thank you Sandra for all of your ingenious recipes.

    So I just made this tonight. I have to say very good. I didn't use the amounts specified in the recipe,I used less, but I was still able to get about 19 fritters. I also only used one banana!
