Ingredients
- 2 1/4 cups cranberry juice cocktail
- 1 box (0.6 oz.) sugar-free cranberry gelatin (recommended: Jell-O)
- 3/4 cup orange flavored vodka
- 1 (16-ounce) can whole berry cranberry sauce (recommended: Ocean Spray)
- 2 tablespoons orange zest
- 1/2 cup chopped pecans
- Fresh cranberries and mint sprigs, for garnish
Directions
In a medium saucepan, bring the cranberry juice to a boil. Transfer to a medium mixing bowl and pour in the gelatin. Stir until gelatin is completely dissolved. Stir in vodka. Chill 1 1/2 to 2 hours in the refrigerator until it begins to set. Stir in remaining ingredients. Divide into 12 (4-ounce) molds. Refrigerate at least 4 hours to set.
Remove from molds by first running the tip of a sharp knife around the edge of the mold to loosen side. Then dip the bottom of mold in a bowl of warm water. Invert onto a plate. Serve garnished with fresh cranberries and a sprig of fresh mint

I love this recipe but I made a few changes. I changed it to orange juice and used orange jello. Otherwise I make it every year. Yum!!!

This recipe is de-lish!! Easy and fun to make. It does have a few flaws that I noticed others have commented on....like the fact that it doesn't stay molded for long. Put it in a bowl....don't bother with the mold. My family went nuts over this cranberry dish last year. I was psyched to find it after searching the net. I cook Thanksgiving dinner every year and last year was the first year I didn't have to throw out the remaining cranberry sauce. Actually, my daughter took some back to Penn State with her....to share with her roomates (huh?..do you think the Vodka content had anything to do with that??.
Play with the recipe a little....get it just the way YOU want it. I highly recommend this recipe....fun to make (since you are making martinis anyways :

We loved this recipe! I just made one large mold, not individual ones, and omitted the nuts as we have a nut allergy in the family. It was wonderful, colorful, and is now an annual recipe here.
